A Gluten Free Ginger Cake Recipe (in a mug)

One of my dear readers took the Gluten Free Chocolate Cake in a Mug recipe that I posted several weeks ago and created a Gluten Free Ginger Cake in a Mug recipe. How awesome is that? I have to say that it’s a good thing that my microwave in non-operational or our 30 day Primal Experiment would definitely be in jeopardy. For all of you who’ve no interest completely cutting out the gluten free sweets, here is the recipe (many thanks to Karla)!

Ingredients

  • 6 Tablespoons Mary Frances’ AP Gluten Free All Purpose Flour mix
  • 1/8 tsp xantham gum
  • 3 Tablespoons sugar
  • 1 Tablespoon brown sugar
  • 1 Egg
  • 3 Tablespoons plain low fat greek yogurt
  • 3 Tablespoons oil
  • 1/2 teaspoon vanilla
  • 1 to 2 teaspoons ground ginger
  • 1 Coffee Mug
  1. Mix flour, xanthan gum, ginger and sugar.
  2. Spoon in 1 egg.
  3. Pour in milk and oil, and mix well.
  4. Put in microwave for 3 minutes on maximum power (1000watt).
  5. Wait until it stops rising and sets in the mug.
  6. Tip contents out of mug onto saucer and enjoy!

    When you get the strawberry cake recipe perfected I would like to have it, love strawberry cake.

  2. I tried printing this recipe and all that came out was the first few ingredients and ALL the stuff around it, not the rest of the recipe. Is there an easier way to print the recipes you post on your website? I love your site, though I am now GF, dairy and casein free, solanine free, sugar free. Makes life even more difficult, but your site helps get me kick started. Thanks!

    1. The easiest way to print the recipes is to copy and paste the parts you want into another file and print that out. It’s been a while since I looked at the recipe printing issue, but the last time I did the fix was going to very time-consuming. We are thinking about creating a cookbook that has all of the blog recipes in it, and then updating that once a year.

  3. If you highlight the text you want to print, in the print screen there is an option under Page Range that is “selection” if you click that, it will only print the highlighted area.
